- 1/2 tsp black pepper

- 1 tsp dried rosemary
- 1 tsp garlic powder
- 1 lemon, halved
- 1 onion, quartered
- 4 sprigs fresh rosemary
- 4 sprigs fresh thyme
Instructions
- Preheat oven to 425°F (220°C).
- Pat the chicken dry with paper towels.
- In a small bowl, mix olive oil, salt, pepper, thyme, rosemary, and garlic powder.
- Rub the mixture all over the chicken, including under the skin.
- Stuff the cavity with the lemon halves, onion quarters, and fresh rosemary and thyme sprigs.
- Place the chicken in a roasting pan.
- Roast for 1 hour and 15 minutes, or until a meat thermometer inserted into the thickest part of the thigh reads 165°F (74°C).
- Let the chicken rest for 10-15 minutes before carving.
Notes
- For crispier skin, you can increase the oven temperature to 450°F (230°C) for the last 15-20 minutes of cooking.
- Basting the chicken with its own juices every 20-30 minutes can help keep it moist.
- Experiment with different herbs and spices to customize the flavor.
