Ingredients

  • 2 cups broccoli florets, steamed
  • 1 cup shredded carrots
  • 1/2 cup chopped red bell pepper

  • Sesame seeds, for garnish (optional)

Instructions

  1. In a bowl, combine the shredded rotisserie chicken, sweet chili sauce, soy sauce, rice vinegar, grated ginger, and minced garlic. Toss to coat the chicken evenly.
  2. Divide the cooked rice among four bowls.
  3. Top the rice with the steamed broccoli, shredded carrots, and chopped red bell pepper.
  4. Spoon the sweet chili chicken mixture over the vegetables in each bowl.
  5. Garnish with chopped green onions and sesame seeds, if desired.
