Instructions
- In a bowl, combine the shredded rotisserie chicken, sweet chili sauce, soy sauce, rice vinegar, grated ginger, and minced garlic. Toss to coat the chicken evenly.
- Divide the cooked rice among four bowls.
- Top the rice with the steamed broccoli, shredded carrots, and chopped red bell pepper.
- Spoon the sweet chili chicken mixture over the vegetables in each bowl.
- Garnish with chopped green onions and sesame seeds, if desired.
Notes
- For a spicier kick, add a pinch of red pepper flakes to the sauce.
- Feel free to substitute other vegetables like snap peas, edamame, or corn.
