- 1.5 lbs boneless, skinless chicken breasts or thighs
- 1 tbsp olive oil
- 1 tbsp butter
- 1 medium onion, finely chopped
- 3–4 cloves garlic, minced
- 1/2 cup sun-dried tomatoes, drained and chopped
- 1 tsp dried Italian seasoning
- 1/4 tsp red pepper flakes (optional)
- 1.5 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chicken broth
- 2 tbsp chopped fresh basil
- Salt and freshly ground black pepper to taste
Instructions
- Pound chicken breasts to an even thickness or cut thighs into bite-sized pieces. Season generously with salt and pepper.
- Heat olive oil and butter in a large skillet over medium-high heat.
- Sear chicken for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
- Add chopped onion to the skillet and sauté until softened, about 5 minutes.
- Add minced garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
- Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to low.
- Stir in grated Parmesan cheese until melted and the sauce is thickened.
- Return chicken to the skillet and spoon the sauce over it.
- Simmer for 2-3 minutes until chicken is heated through and coated in the sauce.
- Stir in fresh basil. Season with additional salt and pepper if needed.
- Serve immediately.
Notes
- For a richer flavor, you can use chicken thighs instead of breasts.
- Adjust red pepper flakes to your spice preference.
- Serve with pasta, rice, or crusty bread to soak up the delicious sauce.
- Garnish with extra Parmesan cheese and fresh basil before serving.
