  • 1 medium onion, finely chopped
  • 34 cloves garlic, minced
  • 1/2 cup sun-dried tomatoes, drained and chopped
  • 1 tsp dried Italian seasoning
  • 1/4 tsp red pepper flakes (optional)
  • 1.5 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chicken broth
  • 2 tbsp chopped fresh basil
  • Salt and freshly ground black pepper to taste

Instructions

  1. Pound chicken breasts to an even thickness or cut thighs into bite-sized pieces. Season generously with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Sear chicken for 3-4 minutes per side, until golden brown and cooked through. Remove chicken from skillet and set aside.
  4. Add chopped onion to the skillet and sauté until softened, about 5 minutes.
  5. Add minced garlic, sun-dried tomatoes, Italian seasoning, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  6. Pour in heavy cream and chicken broth. Bring to a simmer, then reduce heat to low.
  7. Stir in grated Parmesan cheese until melted and the sauce is thickened.
  8. Return chicken to the skillet and spoon the sauce over it.
  9. Simmer for 2-3 minutes until chicken is heated through and coated in the sauce.
  10. Stir in fresh basil. Season with additional salt and pepper if needed.
  11. Serve immediately.
