  • 4 tbsp unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • For the filling:
  • 2 tbsp unsalted butter, softened
  • 2 tbsp erythritol or xylitol
  • 1 tbsp cinnamon
  • For the glaze:
  • 1/4 cup cream cheese, softened
  • 2 tbsp unsalted butter, softened
  • 23 tbsp heavy cream
  • 1 tsp vanilla extract
  • 12 tbsp erythritol or xylitol, to taste

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, cinnamon, and salt.
  3. Add the softened butter, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
  4. On a piece of parchment paper, roll out the dough into a rectangle, about 1/4 inch thick.
  5. In a small bowl, combine the filling ingredients: softened butter, sweetener, and cinnamon. Spread evenly over the dough rectangle, leaving a small border.
  6. Carefully roll up the dough from the long side.
  7. Slice the roll into 8-10 equal pieces.
  8. Place the cinnamon rolls on the prepared baking sheet, leaving some space between them.
  9. Bake for 15-20 minutes, or until golden brown and cooked through.
  10. While the rolls are baking, prepare the glaze. In a medium bowl, beat together cream cheese, butter, heavy cream, vanilla extract, and sweetener until smooth and creamy. Add more heavy cream if needed to reach desired consistency.
  11. Let the cinnamon rolls cool slightly before drizzling with the glaze.
