- 2 large eggs
- 1 tsp vanilla extract
- For the filling:
- 2 tbsp unsalted butter, softened
- 2 tbsp erythritol or xylitol
- 1 tbsp cinnamon
- For the glaze:
- 1/4 cup cream cheese, softened
- 2 tbsp unsalted butter, softened
- 2–3 tbsp heavy cream
- 1 tsp vanilla extract
- 1–2 tbsp erythritol or xylitol, to taste
Instructions
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together almond flour, coconut flour, sweetener, baking powder, cinnamon, and salt.
- Add the softened butter, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
- On a piece of parchment paper, roll out the dough into a rectangle, about 1/4 inch thick.
- In a small bowl, combine the filling ingredients: softened butter, sweetener, and cinnamon. Spread evenly over the dough rectangle, leaving a small border.
- Carefully roll up the dough from the long side.
- Slice the roll into 8-10 equal pieces.
- Place the cinnamon rolls on the prepared baking sheet, leaving some space between them.
- Bake for 15-20 minutes, or until golden brown and cooked through.
- While the rolls are baking, prepare the glaze. In a medium bowl, beat together cream cheese, butter, heavy cream, vanilla extract, and sweetener until smooth and creamy. Add more heavy cream if needed to reach desired consistency.
- Let the cinnamon rolls cool slightly before drizzling with the glaze.
