  • 2 boneless, skinless chicken breasts (about 68 oz each)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-style breadcrumbs

  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • 3 tablespoons olive oil, divided
  • 1 cup marinara sauce
  • 4 slices fresh mozzarella cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Cut each chicken breast in half horizontally to create thinner cutlets. Place each cutlet between two pieces of plastic wrap and pound to about 1/4-inch thickness using a meat mallet or rolling pin.
  3. Set up three shallow dishes. In the first, place the flour seasoned with salt and pepper. In the second, whisk the eggs. In the third, combine the breadcrumbs, grated Parmesan cheese, oregano, and garlic powder.
  4. Dredge each chicken cutlet first in the seasoned flour, shaking off any excess. Then, dip it into the whisked eggs, ensuring it’s fully coated. Finally, press the cutlet into the breadcrumb mixture, coating both sides evenly.
  5. Heat 2 tablespoons of olive oil in a large oven-safe skillet over medium-high heat.
  6. Carefully place the breaded chicken cutlets in the hot skillet and cook for 2-3 minutes per side, until golden brown and crispy. You may need to do this in batches.
  7. Remove the chicken from the skillet and set aside. Drain any excess oil from the skillet.
  8. Pour the marinara sauce into the skillet and bring to a simmer.
  9. Return the chicken cutlets to the skillet, nestling them into the sauce.
  10. Top each chicken cutlet with a slice of fresh mozzarella cheese.
  11. Transfer the skillet to the preheated oven and bake for 10-12 minutes, or until the cheese is melted and bubbly, and the chicken is cooked through.
  12. Garnish with fresh basil leaves and serve immediately, with extra grated Parmesan cheese if desired.

Notes

  • For an extra crispy coating, try using panko breadcrumbs instead of Italian-style breadcrumbs.
  • If you don’t have an oven-safe skillet, you can transfer the chicken and sauce to a baking dish before topping with mozzarella and baking.
