- 2 tbsp olive oil
- 4 tbsp unsalted butter
- 6 cloves garlic, minced
- 1/2 cup chicken broth
- 1/4 cup heavy cream
- 2 tbsp fresh parsley, chopped
- 1 tbsp lemon juice
- Salt and black pepper to taste
Instructions
- Cut chicken into bite-sized pieces. Season with salt and pepper.
- Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through. Remove chicken from skillet and set aside.
- Add butter to the same skillet. Once melted, add minced garlic and cook until fragrant, about 1 minute.
- Pour in chicken broth and heavy cream. Bring to a simmer, then reduce heat and let it thicken slightly, about 3-5 minutes.
- Stir in lemon juice and chopped parsley. Season with salt and pepper to taste.
- Return the cooked chicken to the skillet and toss to coat in the sauce.
- Serve hot, garnished with extra parsley if desired.
