Description

A super easy and delicious Crockpot Broccoli Cheddar Chicken recipe that’s perfect for a weeknight meal. It’s creamy, cheesy, and packed with flavor.


Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 (10.5 ounce) can cream of chicken soup
  • 1 cup chicken broth
  • 1 cup shredded cheddar cheese
  • 1 cup broccoli florets
  • Salt and pepper to taste

Instructions

  1. Place chicken breasts in the crockpot.
  2. In a bowl, mix together cream of chicken soup and chicken broth. Pour over chicken.
  3. Cook on low for 6-8 hours or on high for 3-4 hours.
  4. Remove chicken from crockpot and shred.
  5. Return shredded chicken to the crockpot.
  6. Stir in cheddar cheese and broccoli florets.
  7. Cook for another 30 minutes, or until cheese is melted and broccoli is tender.
  8. Season with salt and pepper to taste.

Notes

  • For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the crockpot during the last 30 minutes of cooking.
  • Feel free to add other vegetables like carrots or mushrooms.
  • Serve over rice, pasta, or mashed potatoes.
