A super easy and delicious Crockpot Broccoli Cheddar Chicken recipe that’s perfect for a weeknight meal. It’s creamy, cheesy, and packed with flavor.

- 2 boneless, skinless chicken breasts
- 1 (10.5 ounce) can cream of chicken soup
- 1 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 cup broccoli florets
- Salt and pepper to taste
Instructions
- Place chicken breasts in the crockpot.
- In a bowl, mix together cream of chicken soup and chicken broth. Pour over chicken.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Remove chicken from crockpot and shred.
- Return shredded chicken to the crockpot.
- Stir in cheddar cheese and broccoli florets.
- Cook for another 30 minutes, or until cheese is melted and broccoli is tender.
- Season with salt and pepper to taste.
Notes
- For a thicker sauce, you can mix 1 tablespoon of cornstarch with 2 tablespoons of water and stir it into the crockpot during the last 30 minutes of cooking.
- Feel free to add other vegetables like carrots or mushrooms.
- Serve over rice, pasta, or mashed potatoes.
