Description

Delightful cranberry orange scones, perfect for a festive breakfast or afternoon tea. These scones are tender, bursting with citrus and berry flavor, and have a beautiful golden-brown crust.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup (1 stick) cold unsalted butter, cut into cubes
  • 1/2 cup dried cranberries
  • 1/4 cup orange zest (from about 2 oranges)
  • 1/2 cup heavy cream, plus more for brushing
  • 1 large egg
  • 1 teaspoon vanilla extract
  • Orange glaze (optional): Powdered sugar, orange juice

Instructions

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  3. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  4. Stir in the dried cranberries and orange zest.
  5. In a separate small bowl, whisk together heavy cream, egg, and vanilla extract.
  6. Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  7. Turn the dough out onto a lightly floured surface and gently pat it into a 1-inch thick round.
  8. Cut the round into 8 wedges using a sharp knife or pizza cutter.
  9. Place the scones on the prepared baking sheet.
  10. Brush the tops of the scones with a little extra heavy cream.
  11. Bake for 15-20 minutes, or until golden brown and puffed.
  12. Let cool on a wire rack. If desired, drizzle with an orange glaze made by whisking powdered sugar with a little orange juice until smooth.

Notes

  • Ensure your butter is very cold for the flakiest scones.
  • Do not overmix the dough, as this can result in tough scones.
  • Dried cranberries can be substituted with fresh cranberries, but they may release more moisture.
  • For extra orange flavor, you can add a tablespoon of orange extract to the wet ingredients.
