Description

A hearty and flavorful twist on classic butter chicken, infused with smoky cowboy-inspired flavors.


Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp grated fresh ginger
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • 1/2 tsp chili powder
  • 1/4 tsp cayenne pepper (optional)
  • 1 (28 ounce) can crushed tomatoes
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 2 tbsp unsalted butter
  • 1/4 cup chopped fresh cilantro
  • Salt and freshly ground black pepper to taste
  • Cooked rice, for serving

Instructions

  1. Season chicken pieces with salt and pepper.
  2. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
  3. Add onion to the skillet and cook until softened, about 5-7 minutes.
  4. Add garlic and ginger and cook for 1 minute more until fragrant.
  5. Stir in cumin, smoked paprika, chili powder, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
  6. Pour in crushed tomatoes and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
  7. Return chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through and tender.
  8. Stir in heavy cream and butter until butter is melted and sauce is smooth.
  9. Season with salt and pepper to taste.
  10. Stir in fresh cilantro.
  11. Serve hot over cooked rice.

Notes

  • For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
  • If you don’t have chicken thighs, you can use chicken breasts, but be careful not to overcook them.
  • This dish can be made ahead of time and reheated.
