A hearty and flavorful twist on classic butter chicken, infused with smoky cowboy-inspired flavors.
Ingredients

- 1.5 lbs boneless, skinless chicken thighs, cut into 1-inch pieces
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 1 tbsp grated fresh ginger
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1/2 tsp chili powder
- 1/4 tsp cayenne pepper (optional)
- 1 (28 ounce) can crushed tomatoes
- 1 cup heavy cream
- 1/2 cup chicken broth
- 2 tbsp unsalted butter
- 1/4 cup chopped fresh cilantro
- Salt and freshly ground black pepper to taste
- Cooked rice, for serving
Instructions
- Season chicken pieces with salt and pepper.
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken and cook until browned on all sides. Remove chicken from skillet and set aside.
- Add onion to the skillet and cook until softened, about 5-7 minutes.
- Add garlic and ginger and cook for 1 minute more until fragrant.
- Stir in cumin, smoked paprika, chili powder, and cayenne pepper (if using). Cook for 30 seconds, stirring constantly.
- Pour in crushed tomatoes and chicken broth. Bring to a simmer, scraping up any browned bits from the bottom of the skillet.
- Return chicken to the skillet. Reduce heat to low, cover, and simmer for 20-25 minutes, or until chicken is cooked through and tender.
- Stir in heavy cream and butter until butter is melted and sauce is smooth.
- Season with salt and pepper to taste.
- Stir in fresh cilantro.
- Serve hot over cooked rice.
Notes
- For a spicier dish, add more cayenne pepper or a pinch of red pepper flakes.
- If you don’t have chicken thighs, you can use chicken breasts, but be careful not to overcook them.
- This dish can be made ahead of time and reheated.
