- 1 lb Boneless, skinless chicken breasts or thighs
- 1/2 cup Fresh parsley, finely chopped
- 1/4 cup Fresh oregano, finely chopped
- 4 cloves Garlic, minced
- 1/4 cup Red wine vinegar
- 1/2 cup Olive oil
- 1/2 tsp Red pepper flakes (optional)
- Salt to taste
- Black pepper to taste
Instructions
- In a bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, and red pepper flakes (if using). Stir well to create the chimichurri sauce. Season with salt and pepper.
- Place the chicken in a resealable bag or shallow dish. Pour about half of the chimichurri sauce over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
- Preheat your grill, oven, or stovetop pan to medium-high heat.
- Remove chicken from the marinade, discarding the excess marinade.
- Cook the chicken until it is cooked through and reaches an internal temperature of 165°F (74°C). This will take approximately 6-8 minutes per side on the grill or pan, or 20-25 minutes in a 400°F (200°C) oven.
- Let the chicken rest for 5 minutes before slicing or serving.
- Serve the chimichurri chicken drizzled with the remaining fresh chimichurri sauce.
Notes
- For an extra garlic flavor, you can add more minced garlic to the sauce.
- Adjust the red pepper flakes to your spice preference.
- Chimichurri sauce can be made ahead of time and stored in the refrigerator for up to a week.
