Description

A vibrant and flavorful Argentinian-inspired dish featuring tender chicken marinated and cooked with a zesty chimichurri sauce, highlighting the pungent kick of garlic.


Ingredients

  • 1 lb Boneless, skinless chicken breasts or thighs
  • 1/2 cup Fresh parsley, finely chopped
  • 1/4 cup Fresh oregano, finely chopped
  • 4 cloves Garlic, minced
  • 1/4 cup Red wine vinegar
  • 1/2 cup Olive oil
  • 1/2 tsp Red pepper flakes (optional)
  • Salt to taste
  • Black pepper to taste

Instructions

  1. In a bowl, combine the chopped parsley, oregano, minced garlic, red wine vinegar, olive oil, and red pepper flakes (if using). Stir well to create the chimichurri sauce. Season with salt and pepper.
  2. Place the chicken in a resealable bag or shallow dish. Pour about half of the chimichurri sauce over the chicken, ensuring it is well coated. Marinate for at least 30 minutes, or up to 2 hours in the refrigerator.
  3. Preheat your grill, oven, or stovetop pan to medium-high heat.
  4. Remove chicken from the marinade, discarding the excess marinade.
  5. Cook the chicken until it is cooked through and reaches an internal temperature of 165°F (74°C). This will take approximately 6-8 minutes per side on the grill or pan, or 20-25 minutes in a 400°F (200°C) oven.
  6. Let the chicken rest for 5 minutes before slicing or serving.
  7. Serve the chimichurri chicken drizzled with the remaining fresh chimichurri sauce.

Notes

  • For an extra garlic flavor, you can add more minced garlic to the sauce.
  • Adjust the red pepper flakes to your spice preference.
  • Chimichurri sauce can be made ahead of time and stored in the refrigerator for up to a week.
