Description

Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 4 slices of your favorite bread (sourdough, ciabatta, or whole wheat work well)
  • 2 cups chopped romaine lettuce
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup Caesar dressing

Instructions

  1. Preheat grill or grill pan to medium-high heat.
  2. Brush chicken breasts with olive oil and season with salt and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through (internal temperature reaches 165°F/74°C). Let rest for 5 minutes, then slice.
  4. Toast bread slices to your preference.
  5. Assemble the sandwiches: spread Caesar dressing on the inside of each toasted bread slice.
  6. Layer the bottom slice of bread with romaine lettuce, grilled chicken slices, and grated Parmesan cheese.
  7. Top with the other slice of bread.
  8. Serve immediately.
