- 1 medium butternut squash (about 2 lbs)
- 8 oz elbow macaroni
- 2 tablespoons butter
- 1/4 cup all-purpose flour
- 2 cups milk
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 teaspoon nutmeg
- 8 oz shredded cheddar cheese
- 4 oz shredded Gruyère cheese
- Optional: Breadcrumbs for topping
Instructions
- Preheat your oven to 400°F (200°C).
- Cut the butternut squash in half lengthwise, scoop out the seeds, and place cut-side down on a baking sheet. Roast for 45-60 minutes, or until tender. Let cool slightly, then scoop out the flesh.
- Cook the elbow macaroni according to package directions. Drain and set aside.
- While the squash is roasting and pasta is cooking, melt the butter in a large saucepan or Dutch oven over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux.
- Gradually whisk in the milk until smooth. Bring to a simmer, stirring, and cook until thickened, about 5 minutes.
- Stir in the salt, pepper, and nutmeg.
- In a blender or food processor, combine the roasted butternut squash flesh with the milk mixture. Blend until completely smooth and creamy.
- Return the sauce to the saucepan. Add the shredded cheddar and Gruyère cheeses and stir until melted and smooth.
- Add the cooked macaroni to the cheese sauce and stir to combine.
- Pour the mac and cheese into a greased baking dish. Top with breadcrumbs if desired.
- Bake for 20-25 minutes, or until bubbly and lightly browned.
Notes
- For a smoother sauce, ensure the butternut squash is completely cooked and soft before blending.
- You can substitute other cheeses like Monterey Jack or Colby for variety.
- Add a pinch of cayenne pepper for a slight kick.
- This recipe can be made ahead and reheated.
