  • 8 oz elbow macaroni

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the butternut squash in half lengthwise, scoop out the seeds, and place cut-side down on a baking sheet. Roast for 45-60 minutes, or until tender. Let cool slightly, then scoop out the flesh.
  3. Cook the elbow macaroni according to package directions. Drain and set aside.
  4. While the squash is roasting and pasta is cooking, melt the butter in a large saucepan or Dutch oven over medium heat. Whisk in the flour and cook for 1 minute, stirring constantly, to form a roux.
  5. Gradually whisk in the milk until smooth. Bring to a simmer, stirring, and cook until thickened, about 5 minutes.
  6. Stir in the salt, pepper, and nutmeg.
  7. In a blender or food processor, combine the roasted butternut squash flesh with the milk mixture. Blend until completely smooth and creamy.
  8. Return the sauce to the saucepan. Add the shredded cheddar and Gruyère cheeses and stir until melted and smooth.
  9. Add the cooked macaroni to the cheese sauce and stir to combine.
  10. Pour the mac and cheese into a greased baking dish. Top with breadcrumbs if desired.
  11. Bake for 20-25 minutes, or until bubbly and lightly browned.
