- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup orzo pasta
- 2 cups chicken broth
- 1 cup chopped broccoli florets
- 1 cup chopped bell pepper (any color)
- 1/2 cup chopped red onion
- 1/4 cup balsamic vinegar
- 2 tablespoons grated Parmesan cheese (optional)
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
- Add orzo pasta to the skillet and stir for 1 minute until lightly toasted.
- Pour in chicken broth and bring to a boil.
- Add broccoli, bell pepper, and red onion to the skillet. Stir to combine.
- Return the browned chicken to the skillet.
- Reduce heat to low, cover, and simmer for 10-15 minutes, or until orzo is cooked through and most of the liquid has been absorbed.
- Stir in balsamic vinegar and cook uncovered for another 1-2 minutes, stirring, until the sauce thickens slightly.
- Remove from heat. Stir in Parmesan cheese, if using.
- Garnish with fresh parsley, if desired, and serve immediately.
Notes
- For a vegetarian option, omit the chicken and use vegetable broth. Add a can of drained and rinsed chickpeas or your favorite plant-based protein.
- Feel free to customize the vegetables based on what you have on hand. Zucchini, peas, or spinach are great additions.
- Adjust the amount of balsamic vinegar to your taste preference.
