Description

A quick, tasty, and flavorful one-pot meal featuring tender chicken, vibrant vegetables, and orzo pasta tossed in a savory balsamic glaze.


Ingredients

  • 1 tablespoon olive oil
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch pieces
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • 1 cup chopped broccoli florets
  • 1 cup chopped bell pepper (any color)
  • 1/2 cup chopped red onion
  • 1/4 cup balsamic vinegar
  • 2 tablespoons grated Parmesan cheese (optional)
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add chicken pieces, salt, and pepper. Cook until browned on all sides, about 5-7 minutes. Remove chicken from skillet and set aside.
  2. Add orzo pasta to the skillet and stir for 1 minute until lightly toasted.
  3. Pour in chicken broth and bring to a boil.
  4. Add broccoli, bell pepper, and red onion to the skillet. Stir to combine.
  5. Return the browned chicken to the skillet.
  6. Reduce heat to low, cover, and simmer for 10-15 minutes, or until orzo is cooked through and most of the liquid has been absorbed.
  7. Stir in balsamic vinegar and cook uncovered for another 1-2 minutes, stirring, until the sauce thickens slightly.
  8. Remove from heat. Stir in Parmesan cheese, if using.
  9. Garnish with fresh parsley, if desired, and serve immediately.

Notes

  • For a vegetarian option, omit the chicken and use vegetable broth. Add a can of drained and rinsed chickpeas or your favorite plant-based protein.
  • Feel free to customize the vegetables based on what you have on hand. Zucchini, peas, or spinach are great additions.
  • Adjust the amount of balsamic vinegar to your taste preference.
